In 1836 in Atri, a small town full of history, in an ancient monastery, where Domenicani Friars had been extracting liquorice juice since the middle ages, thanks to the excellent quality of the roots they picked in the surrounding belt, Cavalier De Rosa began to organize the industrial manifacturing of this plant and its by-products. Since then,the tradition of purity never stopped and
became the main property of the production, till our days. In 1950 Mr. Aurelio Menozzi started a new business with the extracting of liquorice juice, that a few time later took over the "R. De Rosa" company becoming the present "Aurelio Menozzi & R. De Rosa" company.
Liquorice juice extracting process, is very simple: it follows with fidelity the ancient method based on the infusion of ground roots in hot water, obtaining the same purity of the past time. Nowaday, this manifacturing is made by stainless-steel equipment, with the help of low-temperature technology, in order to completely keep the purity and the taste properties, and not to waste natural sugar and the other substances that make the flavour. In these pages we illustrate part of our factory products reserved to the public.
